I have two meshes in blender and both have different uv maps. I was able to uv map both correctly but I need to combine the two and don't know how to do so while keeping one uv map/image...
What is the easiest way for me to get both meshes to work onto on uv map? I'm looking through tutorials and can't find anything :(

As long as the name of the UV map is the same there should be no issue when joining.

Would I have to get all of the individual images onto one image? I have 7 images but two objects.

I would have to say yes. One mesh cannot use multiple textures except as an alternate swatch.

I think I may have to map it all out again. I thought I had to make an image in a 2D editor and apply all the meshes, then map it that way.

Based on your screenshot it looks like you still have the original texture applied to the mesh even tho you are mapping to the new one. On the right side you should see a checkered sphere and a checkered square. Click them in that order (sphere then square) and scroll down in the panel until you see the section "Image", expand it and you should see the name of the current texture applied. Click on the little icon with the double arrow next to that and a list of images will open and you can select the correct texture from there.

I've got it now! Thanks so much! Last thing? How would you suggest fixing this mirror in the back of the box? I tried to follow a tutorial that worked for this problem before but it doesn't seem to work for this object?

The only suggestion I have is to mirror the UV for that part. If there is only one plane then it won't work.
