Can someone explain why this mesh doesn't look smooth after baking but my other ones do? I've followed the baking shadow tutorial correctly and even tried unticking the Alpha box under the UV section but I get the same results.

This happens because the inner part of the mesh and the outer part are mapped into the same place in the uv map. These 2 parts have different shadows as the light hit them differently. This causes blender not to know which planes to render, the dark part inside or the outer part. This happens with complex objects where the textures overlap. To fix it, you can try removing all the faces of the inner part (the part that will touch the mattress) and redo the bake process.
This is only needed for the baking process, you should save the baked image and then close the file without saving those deleted faces.
