human hands don't rotate like that, try rotating your own hand you will see that you are actually just rotating your elbow, so you should rotate the elbow bone instead of the hand bone

In real life, the elbow doesn't rotate, if I wanted to rotate my hand.
If I rotated the elbow though, It will also get twisted in Blender.

There's a reason there's two bones in your forearm... Try rotating the other joints first so you get a better rotation on the arms, then rotate the hand last. That way you don't have to go all-out. If you pose your own arm in roughly the same pose you're trying to achieve, you can see if it looks right.
Most rigs do better with IK on arms and hands, along with proper rotation set up as if there are two bones in the forearm.
