I'm trying to change it so that my social event defaults to using the party clothing category, but can't seem to find a way to do this. I've looked at the wedding and black and white party xml to see if I could figure it out, but haven't been successful yet.

Hopefully you don't mean in Mod Constructor, otherwise I recommend going to his server and asking there. In your SituationJob for your guest and host, and whoever else, you need to add a section that looks like this:

You can replace that one with 7df2169c!00000000!00000000000271d7.outfit_Outfit_Category_Party.snippet.xml, which references the party outfit category already.
One of the Black and White party files you can study is 9c07855f!00000000!000000000000890c.job_Guest_BlackAndWhiteParty.situation_job.xml
