The mesh was smooth before when I first made it, I'm not sure what I did along the process but at some point it showed up pixelated like this: How can I fix this? Any ideas on what I could've done wrong?

Hi. Try the following: - Disable autosmooth; - in edit mode select everything and Face - Shade smooth; - if neither will help, with everything selected, Mesh - Merge - By distance. Do not use edge split modifier on organically shaped objects like this one

Do not use edge split modifier on organically shaped objects like this one Thank you! The first two options made the pixelated mesh more symmetrical? I tried Mesh - Merge - By distance. It worked for the most part except some of the mesh looks like this now.

Seems like your mesh was double-sided before you removed doubles ( all or just that strand ), so if you added it intentionally with Solidify or by duplicating, dont do it, only alpha hair needs this. To fix this issue, select everything with A and Mesh - Normals - Recalculate outside

Anyway, I followed the instructions and it all fixed, thank you!
