I can't speak to using 3DS Max because I cannot afford it and have never seen it. Blender is the closest thing you will find to a very expensive, professional program like 3dS Max or Maya and it can basically do just about anything those two programs can do. I think the learning curve on any of the three is going to be steep because all three can do a ton of stuff and have intricate user-interfaces as a result.
Many people find Blender's interface with all the hotkeys and hidden menus to be a tough go. When I first started using it I found it tough to get used to. Now that I'm used to it it doesn't seem so bad but I remember swearing at it *a lot* at first. When Studio got going we picked Blender as the interface because it's the only 3D editor with power enough for Sims 4 that doesn't cost over $1000. We felt that using an interface like that would price just about all creators out of creating things for Sims 4 using Studio. I've tried to make up for the fact that Blender can be tough to get to know by writing a lot of step by step tutorials going over just about everything you need to make something for the game. That said, mapping isn't necessarily the easiest thing to "get" no matter what program you use...you just have to dive in and work on mapping to really get it. If you dive in using Blender there is a lot of support for that because most people are using Blender. If you go the 3DS route there are not as many people who can help although MisterS does a great job of it here
If you're finding mapping frustrating don't give up...everyone who knows how to map has been there and it doesn't mean you're stupid or too old if it doesn't come easily. It isn't easy stuff...everyone has to work at it to really get it...everyone.
