Instead of extruding, extrude is duplicating my mesh (extruding without faces between the ones it doubles). I had this problem previously, but deleting the extra faces on the underside of my mesh fixed it then. This time, there don't seem to be extras. How would I go about fixing this?

Hi! you extrude the exterior rim edge of the mesh, not all of it.

Hi! you extrude the exterior rim edge of the mesh, not all of it. Hi there c: This only gives me the edge between the faces -- I'm looking to have them behave as though extrude were working (or find a way that makes extrude do so)

it may help if you click this button in blender whilst in edit mode. it lets you see through the mesh to select all vertices and or faces. this may help you in your case. you will have to select with the B key on your keyboard or by holding ctrl and moving the mouse at the same time.

I suggest also suggest using vertex selection, not edge selection. If you need someone to take a look, please share the .blend file.
