I'm kind of running out of time before leaving for work, and I've tried searching for this, but how do we replace portions of the actual sims 4 model viewed in studio? I am making some high waist jeans for kids but it's covered by the t-shirt, and I would like to make the tshirt into a nude top mesh. I think I've done this before, but I'm having brain fart... Do I have to create a default replacement mesh and place it in the studio folder or my mods folder?

Kiara yes, you remembered correctly. All you have to do is make a default replacement of whichever garment the sim in the model viewer is wearing, and place it in your Documents/Studio/Mods folder.
