My eyesight isn't the best and I find myself struggling to read xml files in Sims 4 Studio. So I'm just wondering if there's any way to increase the size of the text?
If not, then that's a future feature I'd like to request

There is not. There might be a way to force your computer to do it on it's end, or you can extract the files you are editing and edit in another program that allows you to change the font sizes.

I have eyesight issues as well (keratoconus. A side effect of Lasik surgery from 20 years ago, believe it or not). If you're on Windows 10 go into settings and the ease of access section. Under Display, you can make text bigger and under "make everything bigger" you can increase the number. I have it set to 125%. If you're really struggling to see something, you can press the Windows key (on the keyboard) + the Numpad plus sign to bring up the magnifier. Press the Windows key + the Esc key to close the magnifier.
You can make icons and text bigger in Blender under User Preferences and you can do the same with Photoshop and, I assume, GIMP.
Making everything bigger on your computer isn't the best solution but it works well when it comes to making things bigger in Studio.
