The tutorials and manual up are for Blender 2.8 and up, which makes it useless since all of the shortcuts changed from 2.79 to 2.8 as well as the behavior. The old manuals aren't up.
I think it's reasonable, since Sims Studio is determined to lag behind on the Blender version and not update, that there should be some flex to allow for Blender-specific questions to Blender 2.79. Maybe a different section for it?

Sims4 Studio-- Hey, look there are tutorial guides that won't help you because we're determined to be on 2.79. And all of the guides are for 3.0, but we're not looking at the fact that Blender changed radically--you are wrong that the shortcuts and behavior is different. Go check out Blender forums.-->

Yes, there is a way to rip the stuff from 2.8+ to 2.79.
But it means any help asked about Blender 2.79 on Blender forums isn't supported and the manual is too different.
It's Sims4 Studio's fault. Take responsibility for lagging behind and allow some Blender 2.79 questions because the videos with tutorials are disappearing... because Ummm... it's not a relevant version anymore.
Allow for new creators and allow Blender questions since you're sooo determined to lag behind on the Blender version by 2+ years.
That said, I ran into problems that are specific to 2.79, but I can't get answers because all of Blender is onto 3.0 and I don't want to go through the forum hunt again because as I said ALL THE SHORTCUTS CHANGED between versions and the 2.79 tutorials aren't really up on that and the old manual is not posted.

One of you three have to make up your minds on who will help and I vote for the one whose fault I'm stuck on an old version of Blender for.
I have questions that I wouldn't have for Blender 3.0, but the questions I ask aren't supported on Blender forums. Someone has to give and I would think that Sims 4 Studio would want more cc creators. You have the most to lose.

I asked some of the tutorial creators and they said no. Because they don't think it needs to be done. (Ridiculous--you know how much the GUI changed?? Basic UX.)

I know it sounds like a lot of whining, but really, the tutorials need to keep up with the versions, and if Sims4 Studio isn't going to support the newest Blender versions, then it needs to give leeway for that and give space to support new creators on the old version of Blender. Don't lock out new creators. And where are we supposed to get a manual for 2.79? CLUE: It's not on the Blender site. They are on 3.0. I checked. Several. times. They deleted the old manuals.
