How do I edit the Sims Archetypes? ex. Archetype_Japanese

Hey guys - Kind of new at modding (but getting there) 
and I'm trying to figure out how to edit the Archetype details for sims but I'm not sure where to go from here. Certain sim groups (Archetype_Asian / Archetype_African etc.) seem to have certain characteristics (like names - which I found where to edit) but sometimes it just doesn't make sense (like red hair for the African archetype and Blonde hair, green eyes for the South Asian one).
and I'm trying to figure out how to edit the Archetype details for sims but I'm not sure where to go from here. How would I go about changing this (not just hair color, probably everything physical if possible)?
