hey all, I was wondering if we would be able to recolor easel paintings like umbrellas now, without overriding the existing painting options that are there.

if I'm not mistaken, those are not the original sizes of the EA paintings, those are Leniad's addons for new collections. I want to recolor the EA paintings that are originally there, I know it can be done as an override but I want to just add paintings essentially that are the under the same categories and sizes as the EA paintings, not Leniad's custom sizes.

Those demonstrate that additional sizes and categories can be added, but you don't have to. For example, OM and I have added several paintings to the EA classical painting group HERE that work without an override, they just require the craftables enabler. You are free to download it and look at it and see how to do it. The tutorial above will help and so will the example. Not all of the steps in the tutorial will be necessary if you aren't adding a new painting type, but if you look at the example, you will see which parts are necessary.
