In the tutorials I've watched, every person has the ability to freely rotate their model- I can't rotate her, not using the mouse or the keys. The only sideways angle I can get is from viewing directly from the right, which really isn't helpful when I need to grab specific pieces. Please give me some guidance. :-((

Is your mouse in the default window? Not the uv. If your cursor is not in the windows it will not rotate.. Blender is funny that way.

If you want to rotate the actual model then press R on your keyboard and move your mouse. If you want to move the camera around the model to view it from different angles then you should just need to hold down the middle mouse button and move the mouse.

Thank you so much! I'm just a foolhardy amateur.

I'd suggest looking at this thread. There are a lot of useful video tutorials about Blender for beginners.
