I do not understand what are you asking about. You need to have a basic knowledge about how uv mapping works, there is no specific tutorial for every case. Or at least provide files and pictures of your problem.

I gave separating the UV islands a go with the blender file you provided. As a caveat, your mesh is very high poly at the moment which wasn't something I was used to so I did find it a bit unwieldy. I also couldn't see the texture you were working with so I've just moved the islands to random places. It only took about five minutes to do with the following method: - Ensure "Keep UV and edit mode mesh selection in sync" is selected in the UV editor (it's by the selection mode buttons, only turning it on so we can edit the selection in 3D)
- Use box select to select an island that was overlapping another in the UV editor
- Use the 3D view editor to deselect the parts of the mesh that shouldn't be selected using the face selection mode
- Tried moving the island in the UV editor to see if any faces were missed, there weren't the islands were no longer overlapping
- If there is still some overlapping faces just use the UV editor and face selection mode to select them and move them
I recorded the steps to try and make them more clear, you can watch here. You can download my attempt here if you'd like to have a look.
