Hello! If I were to cut a sphere un half, and map both the inside and the outside, how would I do that? I can only seem to be able to map the outside

if I correctly understand the problem. add modifier Solidify Would be a possibility and Thickness adjusts the strength then apply

Ok There is another way. your half sphere in Edit Mode shift and D then Shading/UVs push Flip Direction the Normals.
